DOOMS EGGPLANT PARMESAN

1 TBLSP course sea salt
1 medium(slightly fifm to the touch eggplant
1/3 cup all purpose flour
1/2 tblsp ground black pepper
1 cup panko bread crumbs(season yo self with garlic powder pinch mix throughly)
1/4cup fresh grated parmesan chz
2 tsp finely chopped fesh basil(moms this works best if roll basil like piece of paper, be careful with finger tips. Tuck them in & knuckles use as a guide. Slow chop no hurry here)
3 large grade A eggs(beatin)
5ozs. 1/4" thick fresh mozzerella chz(do not use pastuerized)
1 cup fav marinara or pizza sauce(reason is cuz i no time to tell you how to make slur then the sauce)
Also reserve 2 tblsp of shredded parmesan chz at room temp aside
Garnish will be sprigs of fresh basil(not sweet basil)

Prep time 15 mins
Serves only two so adjust if needed.

Directions: (this is specific but not complicated)

1. Cut top&bottom of egg plant off. Peel eggplant using pearing knife(again finger tip kk) cut fruit into 3/8" slices. Wash & sprinkle both sides with salt set aside in colander over plate w paper towel. (Pat dry before diving into makin dish. This is very important)
2. Preheat oven 425degrees lightly oil baking sheet with oil(prefer virgin olive oil. Not extra virgin) set sheet aside.
3. In medium bowl combine flour & pepper. In different bowl combine crumbs, grated parmesan chz & chopped basil.
4. Dip eggplant into beatin eggs(again seperate bowl, DOOMprefers square tupperware dish 2"). Drip then coat, not pack, coat. Then dip agin into eggs& then slighty pack into panko(seasoned). Make sure entire pieces are crumb coated. Arrange on to oiled sheet 1/2" apart at least. Repeat til all pieces are done. Set timer for 22 minutes. Turn using a fork not thongs 1/2 way through.
5. Sauce in sauce pan 8 oz(sry) should be on stove top w/lid on low heat.
6. Place hot, goldenbrowned eggplant on ser ving plate1 at a time and place fresh mozzerella atop first piece each plate. Then place 2nd piece of eggplant stacked like a weld(slightly off centered) repeat process with chz, then repeat til all pieces fit within edges of plates & are plated with chz between layers.
7. Rember the chz should have been room temp. Carefully pour sauce over center of entire plate as to no overflow product reduce if needed. Garnish with grated parmesan & basil sprigs if that is your thing.
Whhheeewwww. Also a recipe i have never written down til now. Enjoy with glass of red wine or sprite w/foodcoloring(red) if kids involved.

hmmm.
good.question.
I'm a vegetarian, furthermore, I dont eat as many vegetables as I perhaps should.
anyhow, i love macaroni cheese, pizza, chips, beans,cheese,gravy,crisps,chocolate,junk food, etc.
tbh though, i sometimes go shopping and return with nothing (or very little)

i tried not eating anything with 'flavouring' in it (whatever that may be) but it didn't last very long, that's for sure.
i think food companies should be more transparent, not hide ingredients with the use of a single word.
