Because in every restart the backup of current game state is made and it takes so much time.

The game restarts when I see the message "The system will restart after 75 seconds" on the screen. I guess it's a mistake. System should restart after 75 seconds after seeing the text. But as soon as I see the system text, it kicks me out of the game.

Exactly ... and 75 seconds later the game comes back online for you to log in again.

As Comp explained: It takes that long to make the backups.
You read it ... get logged off - look at your clock/watch.
1 minute 15 seconds later you can log back into the game.

Most MMORPGs Server Restart/Maintenance time is around 30 to 60 minutes (if not more),
so be thankful it's just 1 minute here!

From what i know these restarts are needed so the System or the Developer can:
-Create a backup incase of a system data crash so there will be a minor rollback instead of a big one, preventing huge data loss.
-Update the game server and files.
-Refresh server restart based timers/systems.
-Refresh ecosystem, like Generating new trees locations.

Also, it's a nice reason to go drink some water while waiting that minute
