Got a doubt about combat: can you help?

Hi, after reading the FAQs about this game, I got a doubt about combat.
Accordingly to how I see things now,
We have:
- total damage (strength + weapons & similar) vs total defence (character's armor value plus armors, helms and shields & similar) about damage dealing;
- dexterity vs. dexterity about hit or dodge.
In short, in order to hit a foe I need to have a dexterity score which is greater than his, including the roll from -5 to +5 that happens each time, not dexterity vs. the opponent's armor value.
To deal damge, do I need to have a total damage greater to the armor value, right?
So, let's assume that I can deal 30 damage to a foe that has armor 50 but I have such a dexterity that I always hit him. What does happen? Do I still deal some damage? Or I'm gonna to hit him but deal no damage, like trying to break an adjacent rock throwing mature tomatoes at it?
