It would be so nice if that log was expanded to include completed quests, current quests with more detail, and maybe even quests that have not yet been started.

Yes.I like this idea.Maybe create a quest log pages like friend list page.Inside the quest page you can view current quests,ongoing quest and finished quest in more detail.Maybe create a small short message box about the quest inside the quest log page where player can easily know about the detail of the quests.
