For the curious or numbers guys I ran some calcs on this using the formulas listed in the help file. As they mention ToHit is Player_Dex - Monster_Dex+Random Roll (-5 to 5 including 0). If result is 1 or higher you hit (a caveat is that a roll of 5 is a Crit and always hits)
I used Monster_Dex=10; and 26 points alloted to Dex or Strength, starting with 5Dex 21Str (would only hit on a crit). Avg Damage "per attack"=1.9points
the table looks like this:
Dex/STR/Avg Damage per roll(based on % chance to hit each roll)
5/21/1.9(only hits on a 5 as a crit)
6/20/1.8 (9%)
7/19/3.5 (18%)
8/18/4.9 (27%)
9/17/6.2 (36%)
10/16/7.3(45%)
11/15/8.2(54%)
12/14/8.9(67%)
13/13/9.5(72%)
14/12/9.8(81%)
15/11/10(90%)
16/10/10 (100%)

You can see that dex is the most critical factor on dealing out damage "per strike attempt", which directly relates to length of time to destroy a mob. ARMOR does reduce damage (that formula wasn't listed in the help file), but I think it might be STR-ARM...with some type of minimum damage; and any roll of 3, 4, 5 that -hits- does max STR as damage.
What's even -more- important, is this equation works exactly the same for Monster attacks on you. So anytime a mob's DEX is 2 or more greater than yours, you are going to miss 2 of 3 attacks and conversely be successfully struck 2 of 3 attacks.
Granted...there are some Mobs with absurd Stats, and then you just need to know you will only be striking about 1 of 11 attempts. But at least you can feel good knowing that since it takes a 5 to hit that mob, you'll be dealing -max- damage so their ARMOR doesn't help them.
I just started the offline game last weekend and after goofing up by not picking up some quest drops etc, I restarted yesterday, and have kept my DEX at Level +3; am wading through areas that were killing me before.

reminds me of me when i started lol;) anyway, damage dealt is str-arm (all the way down to zero if equal) but bypass armor on 5 (and 4 if it is a hit) ... but not 3

I actually missed the very first one "carry this book to the bee-keeper". :-).

Is it 2x STR on a Crit? I've been watching my HP by refreshing the back-pack, and it seems like when i'm hit with a crit the damage tends to be more than I would have expected. Since attacks happen in under 1 second I suppose I could be taking 2x 5s in a row faster than I could refresh and just making it appear like double damage.

not double damage, just bypass armor (probably timing issue as you mentioned is my guess)
